Beauty is not just skin deep, it really does start with the diet. If you’re eating a crap diet, it’s going to show on the outside too. As simple as it may seem when you’re out and about to find a nutritious snack, I’m often at a loss with the lack of healthy easy choices there are when I’m on the run. Make your own I reckon. Then you know exactly what you’re putting into your body.
This yummy paleo carrot loaf/cake is a staple in our house, it’s my go-to snack to make in a hurry. Quick and super easy to make, great sustaining snack for on-the-run-busy-people. Perfect in my daughters’ lunchbox too.
How to make paleo carrot loaf
- 2 eggs
- 2 medium grated carrots
- 1/3 cup butter melted (use coconut oil if you’d prefer true Paleo)
- 1/4 cup honey
- 2 cups almond flour (ground, soaked, dried almonds)
- 1 tsp baking soda
- 1/2 tsp cinnamon
- good pinch of sea salt
- 1/2 cup sultanas or raisins
This recipe is so quick and easy, especially if you have a food processor but works equally well without, just use a hand held mixer to fluff up the eggs and mix in everything else by hand.
Pre-heat the over to 150 degrees celsius.
Whizz the eggs for minute or so in the food processor until they’re fluffy. Throw in your grated carrots, or grate them directly into the eggs with the grating attachment. Then add melted butter and honey. (if you’re hand mixing, you’ll want to melt the honey with the butter).
Combine all dry ingredients except sultanas and add to the mixture. Give it a whizz and then mix in the raisins by hand.
Grease a loaf tin with butter (preferably not the non-stick kind as they contain nasty chemicals that can leach into your otherwise super healthy loaf!) And pour in your mixture.
Bake for around an hour. It’s ready when you can insert a knife and it comes out clean.
Let cool in the pan for a while before turning it out onto a cooling rack.
Slice and serve with a generous smear of butter!
